
Pancakes are not my favorite food. I do not recall ever thinking: “Wow, I sure could go for some pancakes right now.” Yet, I indulge cooking them from time to time anyway. Real honey and some fresh fruit make up for the dryness. I recently bought a box of Bisquick, which I had not seen for some time at my supermarket. The recipe calls for two cup of mix, one cup of fresh milk and two eggs. “Much better!” I thought.
As usual I read all the info on the box. Just my habit. There it was. It stated that to dress the pancakes up add some cinnamon, some bacon or some peanut butter. Then it stated each recipe with amounts and so forth. Temptation is a good thing. This morning I prepared the regular recipe and added, as indicated, one fourth cup of peanut butter plus a hefty sprinkle of cinnamon. My pancakes are always cooked in butter so they are always a bit dark. These babes are plain delicious. Beware to poke them in the center, like an egg, before you turn them over since the centers tended to remain uncooked. I give this new twist a ten. Worth the work and the calories.
