This meal is quick and easy to prepare and very low in carbohydrates, unless you want to add some white rice.

Cut up two onions, one yellow pepper, celery, carrots, ginger ( small amount), and broccoli and toss into heated pan with a couple of tablespoons of extra virgin olive oil. Sprinkle with your favorite herbs; oregano, pepper, etc. Toss around and let it cook. Remove from pan, add cut chicken breast, add some olive oil. Sprinkle with garlic and allow the chicken to brown on all sides. Add the vegetable. Sprinkle sweet and sour sauce over the pan. Enough to get the taste but not too much since you have no side rice. Think about your waistline. The chopping takes fives minutes if you are a slow poke. Cooking the veggies takes another five minutes and the chicken about ten minutes. Twenty minutes and lunch is served. Enjoy.
