If you are anything like me you need new flavors in your life, specially since our lockdown. Chilled soups during the summer, warm and hearty soups during the winter. It’s fair to say that I may have cooked all the best known soups, at least once. The idea of a plantain soup I had enjoyed at a restaurant some time back popped into my mind so off I go to find the perfect plantain soup recipe. No one had one. Everyone has enjoyed it at a restaurant but non idea how to make it. Finally, I consulted my old Puerto Rican cook book: ” Cocine Conmigo” and there it was!!! At first it appeared too simple but it is a blockbuster.

Peel one plantain. Cover in water and one teaspoon of salt for 15 minutes. Take out. Rinse. Have ready six cups of COLD chicken broth. Run the plantain through the food processor to grind as small as possible. Mix 2/3 cup of the ground plantain into the cold chicken broth ( in a pot). Add one teaspoon of salt and bring to a boil while you mix with a wooden spoon. Once hot, filter through a sieve. Place the solids with a bit of the broth in the food processor to liquify. Back to the pot, mix and serve.

It’s not impressive looking. I kind of stared at it for a moment. Then I tasted it and BOOM, mama is it good. Enjoy!!!
