The trick is in the roasted almonds added to the ground Graham Crackers. The second layer is cream cheese, eggs, orange zest, lemon zest. The third layer is added after the cheese cake had been cooked and chilled. Sour cream and flavors.
Cream Cheese Heidi:
Filling:
1 and a half cream cheese, softened . This is three packets.
4 eggs
1 teaspoon of vanilla
bit of salt, orange peel and lemon peel.
Crust:
1 cup Graham cracker crumbs ( run them through the food processor)
1 cup ground roasted almonds ( run them through the food processor)
1/4 cup sugar
1/2 cup softened butter
Topping:
2 cups of Sour Cream
1/2 cup of sugar
2 teaspoons of vanilla
Process:
1- grease a springform bold. Mix the crust ingredients and place in bottom of the pan.
2-Heat oven to 350 degrees. Mix all the filling ingredients and empty on top of crust. Bake for one hour. Allow to cool then refrigerate.
3- once the cheesecake is cold mix the topping ingredients and add to the top of the cake. Bake for one or two minutes. Done and wonderful!
Note: The almonds are toasted at 400 degrees about 5 minutes . Do not let them burn.
