Air Fryer Biscuits
Ingredients:
2 cups of all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
6 tablespoons of salted butter, cold and cubed + 2 tablespoons
¾ cups cold buttermilk ( buttermilk: add 1 tablespoon white vinegar to one cup of milk and let it rest five or ten minutes. That’s buttermilk)
Instructions:
Mix flour, baking powder, and salt.
Using a pastry cutter, mix butter until combined and butter is about the size of small peas. Stir in buttermilk until thick dough forms.
Transfer the dough to a clean counter and kneed it 6 or 7 times until the flour is incorporated. Don’t overwork the dough. You want to see the butter pieces throughout; this makes the biscuits flaky.
Form the dough into a 1 ½ inch thick circle and cut the biscuits using a 2 ½ inch biscuit cutter.
Coat the basket of an air fryer in non-stick spray. Place 2 inches apart.
Air fry at 400 degrees for 8 to 10 minutes.
Leftover dough keeps nicely while refrigerated until the following day. Homemade strawberry butter and steaming hot coffee will make your day a better one. Happy cooking.
