My friend Lucy and I talk about food a lot. We learn from each other. One day she was telling how very much she enjoyed her rice egg scramble. It didn’t sound great but since she never leads me in the wrong direction I gave it a try. Have some cooked white rice ready. Sautee one or two onions in olive oil. Add the spices you like, I added garlic and black pepper. I also added a couple of tiny pieces of tomato so it wouldn’t look so white. Cook the eggs with your spices then mix with the rice and let the flavors mix in the pan. I had seconds!!!
