What a pleasant surprise this little recipe has been.

Cook the thick cut bacon. Save the pan with the fat to cook stage two.

Dip cooked bacon in pancake mix, that should be ready on the side.

Place back in pan and cook and turn over. If the pan gets dry, add a bit of butter.

When both sides are cooked and looking like the picture above, remove from the pan onto your plate.

Drizzle a bit honey over it.

It’s amazingly delicious. We’ve all had bacon and pancakes so I was predisposed to “no big deal”. Well, it is a big deal. Somehow this combination is far better than the individual components.
