First time I ever heard about hoe cakes was while watching the “True Blood” series. It’s a habit of mine to notice and try new things once they are mentioned in a book I’m reading or something on the telly.

Here’s the recipe:

Ingredients: 1 cup self rising flour/ 1 cup all purpose cornmeal / 2 teaspoons baking powder/ 1/2 teaspoon salt (optional) / 1 tablespoon sugar / 3/4 cup buttermilk / 2 large eggs beaten /1/3 cup water / 1/4 cup cooking oil or bacon drippings / 1 tablespoon butter

Whisk together flour, cornmeal, baking powder, salt and sugar. Add buttermilk, Add buttermilk, water, and eggs. Mix well, Heat oil and butter. Add 1/8 cup measure into hot skillet. Drain on papered tray. Enjoy.
