I use Aunt Jemima Complete Buttermilk Pancake Mix.
Ingredients:
1/4 cup butter, softened
3 cups buttermilk mix
1 egg, raw
1/2 cup water
Extra flour for mixing surface
Extra melted butter to coat prior to entering oven
Procedure:
Mix all the ingredients, except those listed under “extra”
Dump on floured surface
Work dough, adding flour as needed until it is the right texture for rolling or patting. ( I did not need extra flour)
Roll or pat to 1/2 inch thickness ( I patted because my rolling pin is very heavy and would squash the dough)
Place on baking pan. I covered the pan with parchment paper to avoid messy cleaning afterwards.
Bake in pre-heated oven at 450 degrees for 10 to 12 minutes.
Note: once they reached room temperature the flavor became enhanced and very delicious. I will be making these many times.
