Boil your pasta. In this case 12 minutes. In the mean time heat a couple of tablespoons of extra virgin olive oil. Add chopped onion, a full tablespoon of dried parsley, another of oregano, a handful of Mandarin or regular orange skins, a large sprinkle of garlic. Watch that the onion does not over cook. Add more olive oil since the herbs suck it up, When the onion is ready, add shrimp. Squeeze the juice of a mandarin orange or regular orange and cook until the shrimp turn pink. About one minute. Bring your cooked pasta into this shrimp mix and toss until coated. Serve. Add Parmesan cheese.

If you start cooking the shrimp and sauce midway through the pasta cooking this quickie lunch menu should take no longer than 12 minutes to cook, from start to finish.
