Crispy Salmon Bites and Pasta.

If you are in the mood for a tasty and easy-to-prepare meal crispy salmon bites over seasoned pasta is the answer.

Boil your pasta and keep it nearby.

Place your salmon filets in a flat container ready to be seasoned.

I use roasted garlic powder, herbs de provence, parsley, rosemary, juice from half a large lime, bits of fresh ginger, a small drip of honey, butter, parmesan cheese and olive oil.

Sprinkle the salmon filets with garlic powder, herbs de provence, parsley, rosemary, Set aside.

Heat butter, a couple of teaspoons, in a pan. When the butter starts to sizzle and before it burns brown, place the salmon filets and fresh ginger  and allow to cook for a couple of moments. Afterward turn and continue cooking. Once done use a knife or spatula to cup into pieces and increase heat to create the crispy effect. Don’t walk away. Eyes on the crispy effect or you’ll burn it. Trust me, I have. Turn the heat off. Drizzle some honey over the fish and let it sit. Just a little bit to add and merge the flavors. After a minute or so remove salmon from the pan.

Heat the same pan on medium/low. Add a couple of tablespoons of extra virgin olive oil and  the portion of pasta you want to serve. Toss merging all the flavors. Serve and place salmon crisps on top. Add parmesan cheese. Enjoy.

Note: I normally first boil the water for my pasta and do not start cooking the salmon until the pasta is in the boiling water. Twelve minutes is sufficient time to cook the salmon.

I hope you enjoy this wonderful and quick meal.
