Copper or porcelain pans only. Important.
1 head of garlic peeled and chopped. /
2 inch piece of fresh ginger peeled and chopped. /
1 and 1/2 cup of vinegar ( I use white) /
1 can of 1 lb and 12 oz of tomato, keep the liquid. /
1 and 1/2 cups of sugar /
2 tablespoons of raisins /
2 tablespoons of chopped almonds.
( I always make a double batch)
Put the garlic, ginger and 1/2 vinegar in food processor until it becomes a paste.
Put the rest of the ingredients, (except raising and almonds) in a pot and heat until it boils.
Add the food processor ingredients.
Lower heat and cook slowly, without cover for about 2 hours, until it thickens /
Add the raisins and the the almonds.
When it cools I spoon into sterile jars and refrigerate for over a month. On the side to meat, poutry even fish, it is delicious.
