The magic of lowering your salt consumption, without losing the flavors of food, is learning how to use to your herbs and spices. An essential component of French and Mediterranean cooking are the unique mixture of Herbes de Province. I’ve been mixing my own for several years and I just can’t live without it. Here are the ingredients.:

Basi, fennel, marjoram. parsley, rosemary, tarragon, thyme, crushed bay leaves, savory, chervil, sage, oregano, mint and lavender flowers.

The mix I made has 1/4 cup thyme and 2 tablespoons of each of the other ingredients. I place this in an airtight, very clean and dry container. I twist a piece of napkin and place it inside the container to repel humidity. Mine is kept refrigerated but I live in the tropics. Things grow feet and walk away. This is worth having in your secret chest.
